Baked Sweets! Fluffy Chocolate Madeleines
- 2 Eggs
- 50 grams Sugar
- 50 grams Cake flour
- 10 grams Cocoa powder
- 1/2 tsp Baking powder
- 50 grams Unsalted butter
- Bring the eggs to room temperature.
- Place the butter in a heatproof container and microwave for 1-1.5 minutes.
- Or melt in a double boiler.
- Preheat the oven to 180C.
- Crack the eggs into a bowl and add the sugar.
- Beat with an electric mixer until the egg mixture forms ribbons.
- Sift in the cake flour, cocoa powder and baking powder together from a height to incorporate air.
- Using a rubber spatula, combine with a cut and fold motion until the dry ingredients are only mostly incorporated.
- Try mixing around the centre of the batter, as if scooping the batter from the bottom, and turning it over.
- Pour melted butter slowly into the batter and again mix with the rubber spatula.
- Please note that even if you mix the cocoa powder, it won't give the batter an even colour.
- Pour the batter into cupcake lining to 70~80% full.
- Bake in the preheated (180C) oven for 12 minutes or so.
