Baked Sweets! Fluffy Chocolate Madeleines

  1. Bring the eggs to room temperature.
  2. Place the butter in a heatproof container and microwave for 1-1.5 minutes.
  3. Or melt in a double boiler.
  4. Preheat the oven to 180C.
  5. Crack the eggs into a bowl and add the sugar.
  6. Beat with an electric mixer until the egg mixture forms ribbons.
  7. Sift in the cake flour, cocoa powder and baking powder together from a height to incorporate air.
  8. Using a rubber spatula, combine with a cut and fold motion until the dry ingredients are only mostly incorporated.
  9. Try mixing around the centre of the batter, as if scooping the batter from the bottom, and turning it over.
  10. Pour melted butter slowly into the batter and again mix with the rubber spatula.
  11. Please note that even if you mix the cocoa powder, it won't give the batter an even colour.
  12. Pour the batter into cupcake lining to 70~80% full.
  13. Bake in the preheated (180C) oven for 12 minutes or so.
