Mediterranean Meatballs with Couscous

  1. COMBINE the mince, PHILLY, onion, garlic, egg, breadcrumbs, olives, oregano and seasonings in a large bowl.
  2. Shape mixture into 24 meatballs.
  3. HEAT oil in a large nonstick frypan, and cook the meatballs in 2 batches, for 5 minutes each or until browned.
  4. Return all meatballs to pan.
  5. Add tomatoes, stock and sugar, bring to the boil then simmer uncovered for 1520 minutes.
  6. SPOON the meatballs onto a bed of couscous on serving plates and drizzle with sauce.
  7. Serve with crusty bread.
  8. Serve immediately.
