Mediterranean Meatballs with Couscous
- 500 g pork and veal mince Safeway 1 lb For $1.99 thru 02/09
- 125 g PHILADELPHIA Spreadable Cream Cheese
- 1 onion, finely chopped Safeway 1 lb For $1.49 thru 02/09
- 2 cloves garlic, crushed
- 1 egg
- 2 cups fresh breadcrumbs
- 1/2 cup stuffed green olives, finely chopped
- 1 tablespoon finely chopped oregano
- salt and pepper, to taste
- 1 tablespoon oil
- 800 g can chopped tomatoes
- 1 cup chicken stock Whole Foods 1 lb For $3.99 thru 02/09
- 1 teaspoon brown sugar
- couscous, to serve
- crusty bread, to serve
- COMBINE the mince, PHILLY, onion, garlic, egg, breadcrumbs, olives, oregano and seasonings in a large bowl.
- Shape mixture into 24 meatballs.
- HEAT oil in a large nonstick frypan, and cook the meatballs in 2 batches, for 5 minutes each or until browned.
- Return all meatballs to pan.
- Add tomatoes, stock and sugar, bring to the boil then simmer uncovered for 1520 minutes.
- SPOON the meatballs onto a bed of couscous on serving plates and drizzle with sauce.
- Serve with crusty bread.
- Serve immediately.
