Summer Squash and Basil Ziti
- 1 lb. ziti
- similar pasta
- 1/2 cup butter
- 1-1/2 lb. yellow summer squash
- 3 cloves garlic, chopped
- 1/4 cup green chile,
- to taste
- 3 whole green scallions, finely chopped
- 1 cup fresh basil leaves, chopped
- 1/2 cup fresh Italian parsley, finely chopped
- Salt
- Freshly ground black pepper
- 1/4 cup Parmesan cheese, freshly grated
- Start ziti cooking in water.
- Meanwhile, cut squash into quarters lengthwise, then slice.
- Melt butter in a large, heavy skillet.
- Add squash and cook for 5 minutes.
- Add garlic and green chile, and cook 5 minutes longer, or until squash is cooked through.
- Stir in green onions, basil, parsley, salt, and pepper, and cook another 3 minutes.
- Toss with hot pasta, add Parmesan cheese, and toss again.
- Pass extra grated cheese and the pepper mill for each person to add to taste.
