Summer Squash and Basil Ziti

  1. Start ziti cooking in water.
  2. Meanwhile, cut squash into quarters lengthwise, then slice.
  3. Melt butter in a large, heavy skillet.
  4. Add squash and cook for 5 minutes.
  5. Add garlic and green chile, and cook 5 minutes longer, or until squash is cooked through.
  6. Stir in green onions, basil, parsley, salt, and pepper, and cook another 3 minutes.
  7. Toss with hot pasta, add Parmesan cheese, and toss again.
  8. Pass extra grated cheese and the pepper mill for each person to add to taste.
