Royal Blush Cocktail

  1. Combine the vodka, lime juice, Simple Syrup, cherry juice and mint leaves in a shaker with ice.
  2. Shake until chilled and strain into 4 martini glasses.
  3. Top each glass with champagne and serve.
  4. Combine the sugar and 1 cup water in a small saucepan and bring to a boil.
  5. Cook, stirring, until the sugar dissolves.
  6. Remove from the heat and let cool completely.
  7. Keep covered in the refrigerator up to 1 month.
  8. Yield: 1 1/2 cups
