Asian Pork Tenderloin with Smashed Sweet Potatoes
- 2 whole Pork Tenderloins, Trimmed
- 2 Tablespoons Green Onions, Sliced
- 2 Tablespoons Hoisin (or Plum Sauce)
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Honey
- 1 Tablespoon Hot Water
- 2 whole Sweet Potatoes (or 3)
- 2 Tablespoons Half-and-half
- 2 Tablespoons Brown Sugar
- 1 teaspoon Orange Zest And The Juice Of Half And Orange
- Salt and pepper the pork and place in large Ziploc baggie.
- Whisk the sauce ingredients and add half to the pork in the bag.
- Marinate while your grill is preheating.
- Grill until done, about 15-20 minutes.
- Wash the potatoes and poke a bunch of holes in them.
- Bake them at 350 degrees for an hour, or, do what I did and stick them in the microwave for about 7 minutes or until tender.
- Let them cool a bit and then slice them in half and scoop out the pulp.
- Smash up the potato pulp with the other ingredients in the bowl and season with salt and pepper.
- Let the pork rest for 10 minutes after it comes off the grill.
- Slice and drizzle with the reserved sauce.
- Serve with sweet potatoes and a green veggie.
- We had broccoli and it felt right.
