Asparagus & Peas Potato Salad
- 1 lb. (450 g) small red potatoes (about 15) King Sooper's 5 lb For $1.88 thru 02/09
- 1 lb. (450 g) fresh asparagus spears, trimmed, cut into 2-inch lengths
- 2 cups frozen peas
- 2 stalks celery, thinly sliced
- 4 green onions, chopped
- 1/2 cup Miracle Whip made with Olive Oil Spread*
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 Tbsp. Dijon mustard
- 1 clove garlic, minced
- Cook potatoes in large saucepan of boiling water 15 min.
- or just until tender, adding asparagus to the boiling water the last 3 min.
- ; drain.
- Cool.
- Cut potatoes into quarters; place in large bowl.
- Add asparagus, peas, celery and onions; mix lightly.
- Mix remaining ingredients until blended.
- Add to potato mixture; toss to evenly coat.
- Refrigerate 30 min.
