Mteshs Finger-Lickin Glazed Chicken
- 2 tablespoons tomato ketchup
- 2 tablespoons butter
- 1 teaspoon salt
- 1 chili seasoning cube
- 1 medium tomatoes, diced
- 2 medium red onions, diced
- 3 cloves, diced
- 2 tablespoons water
- 1 teaspoon honey
- 1 tablespoon corn oil or 1 tablespoon olive oil
- 8 chicken legs
- 1 medium tomatoes, diced
- 1 medium red onion, diced
- 2 cloves, diced
- To prepare the glaze sauce, start by heating the butter in a large skillet.
- Over medium heat saute the 2 diced red onions till translucent, add the diced garlic and continue frying for a few minutes.
- Add the diced tomato and fry till soft.
- Stir in the tomato paste, seasoning cube, water and honey.
- Cook for a few minutes till the sauce thickens.
- Set aside.
- To start preparing the chicken, in a large saucepan heat the corn oil/olive oil.
- Over medium heat saute the 2 red onions till translucent, add the diced garlic and continue frying for a few minutes.
- Add the diced tomato and fry till soft.
- Add the chicken legs and over medium-high heat cook till almost done.
- Remove from the saucepan.
- Place the skillet with the glaze sauce prepared earlier over medium heat and add the chicken legs.
- Cook till the sauce turns sticky and reduce the heat to low.
- Cook turning over the chicken to ensure an even coating on all sides.
- Continue till the chicken is glazed.
