Ginger-Sesame Mashed Potatoes

  1. Bring potatoes, ginger, salt, and enough water to cover potatoes by 1 inch to a boil in large saucepan.
  2. Reduce heat to medium-low, and simmer 20 to 25 minutes, or until potatoes are tender.
  3. Drain, and discard ginger.
  4. Return potatoes to pot, and mash with remaining ingredients over medium-low heat 3 to 5 minutes, or until most of liquid has evaporated.
