Golden Lemon Pound Cake
- 2/3 c. butter-flavored shortening
- 1 1/4 c. sugar
- 2 Tbsp. lemon juice
- 1 tsp. lemon extract
- 2/3 c. milk
- 2 1/4 c. cake flour
- 1 1/4 tsp. salt
- 1 tsp. baking powder
- 3 eggs
- confectioners sugar
- In a mixing bowl, cream shortening and sugar.
- Beat in lemon juice and extract. Add milk; beat for 30 seconds.
- Sift cake flour, salt and baking powder; gradually add to creamed mixture. Beat on low speed for 2 minutes.
- Add eggs, one at a time, beating for 1 minute after each.
- Pour into a greased and floured 9 x 5 x 3-inch loaf pan.
- Bake at 300u0b0 for 1 hour and 30 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before removing from pan to a wire rack to cool completely.
- Dust with confectioners sugar for an added touch.
- Yield: 1 loaf.
