Golden Lemon Pound Cake

  1. In a mixing bowl, cream shortening and sugar.
  2. Beat in lemon juice and extract. Add milk; beat for 30 seconds.
  3. Sift cake flour, salt and baking powder; gradually add to creamed mixture. Beat on low speed for 2 minutes.
  4. Add eggs, one at a time, beating for 1 minute after each.
  5. Pour into a greased and floured 9 x 5 x 3-inch loaf pan.
  6. Bake at 300u0b0 for 1 hour and 30 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  8. Dust with confectioners sugar for an added touch.
  9. Yield: 1 loaf.
