Fresh Vegetable Gumbo
- 1 lb. beef ribs
- 1/4 tsp. pepper
- 3 qt. water
- 1 medium onion, cut fine
- 2 1/2 tsp. salt
- 3 c. peeled and diced fresh tomatoes
- 1 (16 oz.) pkg. frozen or fresh okra, cut up
- 1 (10 oz.) pkg. lima beans
- 1 1/2 c. fresh corn
- 2 c. diced, cooked chicken
- Cook beef ribs, pepper, water, onion and salt on medium heat until fork-tender.
- Remove meat from broth.
- Add to broth tomatoes, okra and lima beans.
- Cook at least 1 1/2 hours.
- Add fresh corn and cook 30 minutes.
- Add chicken and cook about 30 minutes.
- Dice the lean meat from the ribs and add to the gumbo.
- This seems like a lot of fixing, but it isn't all that much trouble and it makes a lot.
- It freezes well.
- Good to have on hand on "short notice" company.
