Simple Potato Fry Curry
- 3 Tablespoons Oil
- 1 teaspoon Mustard Seeds (optional)
- 1 teaspoon Cumin Seeds
- 1 whole Large Yellow Onion
- 3 whole Russet Potatoes
- 1/2 teaspoons Turmeric
- 1 teaspoon Salt
- 1 teaspoon Chili Powder
- Heat oil in a kadai/frying pan and add the mustard seeds and jeera (cumin seeds).
- Once the mustard starts to sputter, add onions and potatoes along with turmeric and salt.
- Mix well and cook on medium heat until the potatoes are half-cooked.
- Then increase the heat to medium high and cook till the potatoes are fully cooked.
- You have to keep sauteing the potatoes at this stage often.
- You should be able to see the caramelization of onions and potatoes and the pieces will start having a golden brown color.
- Thats when you stop cooking.
- Add the chili powder just before you turn off the heat and enjoy.
