Shrimp Boats
- 1 stick butter
- 2 c. chopped 1015 onions
- 1 green bell pepper, chopped
- 1 tsp. cayenne
- 1 to 2 cloves garlic, minced
- 1 lb. clean, shelled shrimp
- salt and pepper
- 1 loaf French bread
- 2 c. Cheddar cheese, grated (8 oz.)
- 2 c. Mozzarella cheese, grated (8 oz.)
- 1 c. sliced black olives
- 1 c. sliced green olives
- Melt butter in large saucepan.
- Add 1 cup onion, bell pepper, cayenne and garlic; saute over medium heat 2 to 3 minutes.
- Add shrimp and saute about 4 more minutes until pink.
- Season with salt and pepper; set aside.
- Cut French bread in half lengthwise; scoop out soft center.
- Toast bread that was scooped out and crumble into shrimp mixture.
- Divide shrimp mixture and spoon into shells.
- Layer Cheddar and Mozzarella over shrimp.
- Top with olives and remaining 1 cup onion.
- Bake at 350u0b0 for about 25 minutes.
