After School Cupcakes Recipe
- 1 pkt chocolate cake mix prepared as directed
- 1 pkt cream cheese - (8 ounce) softened
- 1/4 c. sugar
- 1 x egg
- 1 c. butterscotch chips - (6 ounce)
- 1/2 c. minced walnuts
- 1 ct cream cheese frosting - (16 ounce)
- Preheat the oven to 350 degrees.
- Spoon the prepared batter equally into 24 muffin c. which have been lined with paper baking c., filling each c. three-quarters full.
- In a medium bowl, beat the cream cheese, sugar, and egg till fluffy.
- Stir in the butterscotch chips and walnuts till well mixed.
- Spoon a heaping tsp.
- of the cream cheese mix into the center of the batter in each c..
- Bake for 15 to 20 min, or possibly till a wooden toothpick inserted in the cupcakes comes out clean.
- Allow to cold completely, then frost with the cream cheese frosting.
- Serve, or possibly cover loosely till ready to serve.
- This recipe yields 24 servings.
