Halibut Delight
- 1 pound halibut cut into chunks
- 1 cup flour, all-purpose
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons curry powder
- 1 teaspoon marjoram
- 2 teaspoons baking powder
- 3/4 teaspoon lemon pepper
- 2 cups potato flakes
- 12 ounces beer flat, or less
- Combine flour, garlic powder, curry powder, marjoram, baking powder, and lemon pepper.
- Mix well.
- Slowly add enough flat beer to make a thick batter.
- Dip halibut in batter and then roll in potato flakes.
- Let stand for 2 minutes.
- Deep fry in 375 degree F. fat until golden brown.
- Drain on absorbent paper and serve with a tartar sauce or a zesty tomato, horseradish sauce for dipping.
