Waikiki Meatballs Recipe
- 1 1/2 lbs. grnd beef
- 2/3 c. cracker crumbs
- 1/3 c. chopped onion
- 1 egg
- 1 1/2 teaspoon salt
- 1/4 teaspoon ginger
- 1/4 c. lowfat milk
- 1 tbsp. shortening
- MEATBALLS: Mix first 7 ingredients and shape into tiny meatballs.
- Brown in skillet with shortening.
- Remove meatballs.
- Keep hot.
- Pour fat from skillet.
- SAUCE: Mix cornstarch and sugar, stir in reserved syrup, vinegar and soy sauce.
- Pour into skillet and cook over medium heat, stirring constantly till mix thickens and boils.
- Boil and stir 1 minute.
- Add in meatballs, pineapple tidbits and green pepper.
- Heat through and serve over rice.
- Serve with vegetables, corn preferred.
