Asian Lettuce Wraps
- Dipping Sauce
- 3-1/2 cups Kraft Zesty Italian Dressing, divided
- 1-1/2 cups lime juice, divided
- 2-1/2 cups orange marmalade
- 2-1/2 Tbsp. sriracha chilisauce
- Meat Mixture
- - 80% lean ground beef
- 1-1/2 cups shiitake mushrooms, cooked, sliced
- 1-1/2 cups green onions, chopped
- 1/2 cup red peppers, diced
- 1/3 cup fresh cilantro, chopped
- 2 Tbsp. lime zest, grated Safeway 3 ct For $1.00 thru 02/09
- 2 Tbsp. gingerroot, grated
- 2 tsp. minced fresh garlic
- Wraps
- 40 each large Bibb lettuce leaves
- 8 each large yellow peppers, each cut into 20 very thin strips Target 1 pkg For $2.99 thru 02/06
- 32 each snow peas, each cut into 5 very thin strips
- Dipping Sauce: Mix 2-1/2 cups (625mL) of the dressing (or 1-1/4 cups 300 mL of the dressing for the trial recipe), 1-1/4 cups (300 mL) of the lime juice (or 10 Tbsp.
- 155 mL of the lime juice for the trial recipe), the marmalade and the chili sauce; cover.
- Refrigerate until ready to use.
- Meat Mixture: Brown meat in large skillet; drain.
- Add remaining 1 cup (250 mL) dressing (or remaining 1/2 cup 125 mL dressing for trial recipe), the mushrooms, onions, remaining 1/4 cup (50mL) lime juice (or remaining 2 Tbsp.
- 30 mL lime juice for the trial recipe), the peppers, cilantro, lime peel, ginger and garlic; mix well.
- Wraps: Spoon 1/4 cup (50 mL) of the Meat Mixture onto center of each lettuce leaf; top with 4 each yellow pepper and snow pea strips.
- Roll up.
- Serve each portion with 1/4 cup (50 mL) of the Dipping Sauce.
