Asian Lettuce Wraps

  1. Dipping Sauce: Mix 2-1/2 cups (625mL) of the dressing (or 1-1/4 cups 300 mL of the dressing for the trial recipe), 1-1/4 cups (300 mL) of the lime juice (or 10 Tbsp.
  2. 155 mL of the lime juice for the trial recipe), the marmalade and the chili sauce; cover.
  3. Refrigerate until ready to use.
  4. Meat Mixture: Brown meat in large skillet; drain.
  5. Add remaining 1 cup (250 mL) dressing (or remaining 1/2 cup 125 mL dressing for trial recipe), the mushrooms, onions, remaining 1/4 cup (50mL) lime juice (or remaining 2 Tbsp.
  6. 30 mL lime juice for the trial recipe), the peppers, cilantro, lime peel, ginger and garlic; mix well.
  7. Wraps: Spoon 1/4 cup (50 mL) of the Meat Mixture onto center of each lettuce leaf; top with 4 each yellow pepper and snow pea strips.
  8. Roll up.
  9. Serve each portion with 1/4 cup (50 mL) of the Dipping Sauce.
