Fruit Cake
- 1/4 lb. butter
- 1/4 c. sugar
- 3 eggs
- 1 c. plus 2 Tbsp. all-purpose flour
- 1/4 tsp. each cinnamon, allspice, cloves and nutmeg
- 1/4 c. honey in which has been dissolved 1/4 tsp. soda
- 1/2 box raisins
- 1/4 lb. dates, cut fine
- 3 c. mixed nuts (black walnuts, English walnuts and Brazil nuts)
- 1 c. pecans
- 2 1/4 lb. candied fruit
- 6 oz. dried figs
- Cream butter and sugar thoroughly.
- Add eggs, one at a time, beating after each.
- Combine all fruits and nuts in large bowl. Sift over them some of the flour combined with spices.
- Toss to coat thoroughly.
- Add remaining flour-spice mixture to first creamed mixture alternately with honey and soda.
- Combine with fruit and nut mixture and mix thoroughly.
- Pour into greased pan. Decorate with pineapple slices and bake in 275u0b0 oven for about one and one-half hours.
- Let cool before removing from pan.
- Do not open stove door on your cake.
