Mediterranean Eggplant Salad
- 4 lebanese eggplants, halved Safeway 1 ea For $1.28 thru 02/09
- 200g mixed lettuce leaves
- 150g roasted red capsicum, sliced
- 100g feta, cubed
- 1/2 cup black olives
- 1/3 cup KRAFT* Greek Dressing
- Cook eggplants under a hot grill.
- Combine with lettuce, red capsicum, feta, black olives.
- Drizzle with dressing.
- Serve warm or cold.
