Mediterranean Eggplant Salad

• 4 lebanese eggplants, halved Safeway 1 ea For $1.28 thru 02/09
• 200g mixed lettuce leaves
• 150g roasted red capsicum, sliced
• 100g feta, cubed
• 1/2 cup black olives
• 1/3 cup KRAFT* Greek Dressing

1. Cook eggplants under a hot grill.
2. Combine with lettuce, red capsicum, feta, black olives.
3. Drizzle with dressing.
4. Serve warm or cold.
