Simple Strawberry Pie
- 1 cup Pecans
- 2 cups Almonds
- 2 Tablespoons Coconut Oil, Melted
- 1 cup Dates, Pitted
- 2 pints Strawberries (rinsed, Stemmed And Sliced)
- 1/4 cups Water
- 1 Tablespoon Arrowroot
- 1 Tablespoon Lemon Juice
- Note the assembled pie requires a minimum 3 hours of refrigeration.
- For the crust: 1.
- Preheat oven to 375 F. 2.
- Place the pecans and almonds into a food processor and blend into a fine flour.
- 3.
- Add the melted coconut oil and dates and blend again until a sticky dough is formed.
- 4.
- Remove the crust from the processor and place into a greased 9-inch pie dish.
- 5.
- Bake at 375 F until the top begins to brown, usually about 20-25 minutes.
- Remove from oven and set aside to cool.
- For the filling: 1.
- Place the strawberries and water into a pot.
- Bring to a boil, then add the arrowroot.
- 2.
- Turn mixture down to low and add lemon juice.
- 3.
- Stir constantly until the arrowroot has dissolved and a gel-like substance is formed.
- 4.
- Remove mixture from the heat and let it cool to room temperature.
- 5.
- Pour the filling into the crust and place in the fridge for at least 3 hours.
