Creamy New Potatoes and Spinach

  1. Cook potatoes in boiling water in large saucepan 15 min.
  2. or until tender.
  3. Meanwhile, microwave Neufchatel, milk and shallots in microwaveable bowl on HIGH 2 to 3 min.
  4. or until Neufchatel is melted and mixture is hot, stirring after each minute.
  5. Drain potatoes.
  6. Place spinach leaves in saucepan.
  7. Add potatoes, cream cheese sauce and shredded cheese; mix lightly.
  8. Transfer to shallow serving bowl; top with bacon.
  9. Serve immediately.
