Grandma Witt's German Potato Salad Recipe
- 6 - 7 med. potatoes, cooked
- 4 stalks celery
- 1 onion
- 1/2 green pepper
- 4 Large eggs, hard-boiled
- 6 slices bacon
- 1/2 c. mild white vinegar
- 1 c. water
- 1 1/2 tbsp. sugar
- 3 tbsp. bacon fat
- Fresh parsley
- Cut up potatoes into bite-sized pcs.
- Fry bacon and crumble into pcs on top of potatoes.
- Remove the yellow from the hard-boiled Large eggs and make a paste.
- Mix water, vinegar, sugar and bacon fat into yellow paste mix, stirring constantly to prevent lumps.
- Bring mix to a boil, stirring the whole time.
- Cut up the white of Large eggs and mix into potatoes along with celery, onion, green pepper and parsley.
- Pour liquid over potatoes and mix.
