Oatmeal Raisin Cookies

  1. Preheat oven to 400u0b0 and grease 2 cookie sheets.
  2. In a medium bowl, mix together the flour, baking powder and salt.
  3. In a large bowl using an electric beater set on medium speed, beat together the butter and sugar until light and fluffy.
  4. Beat in egg.
  5. Reduce mixer to low and gradually beat in the flour mixture, oats and zest.
  6. Drop dough by rounded tablespoonful onto the prepared cookie sheets spaced 2 inches apart.
  7. Bake until golden brown, about 10 minutes.
  8. Transfer to a wire rack to cool.
  9. Repeat with remaining dough.
  10. Let the sheets cool before adding the next batch.
  11. This will stop the cookies from spreading during baking.
