Oatmeal Raisin Cookies
- 2 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. butter or margarine, softened
- 1 1/2 c. sugar
- 1 large egg
- 1 1/2 c. old-fashioned rolled oats
- 1 Tbsp. grated orange or lemon zest
- 1 c. raisins
- Preheat oven to 400u0b0 and grease 2 cookie sheets.
- In a medium bowl, mix together the flour, baking powder and salt.
- In a large bowl using an electric beater set on medium speed, beat together the butter and sugar until light and fluffy.
- Beat in egg.
- Reduce mixer to low and gradually beat in the flour mixture, oats and zest.
- Drop dough by rounded tablespoonful onto the prepared cookie sheets spaced 2 inches apart.
- Bake until golden brown, about 10 minutes.
- Transfer to a wire rack to cool.
- Repeat with remaining dough.
- Let the sheets cool before adding the next batch.
- This will stop the cookies from spreading during baking.
