Holiday Pumpkin Pudding Recipe
- 1 c. evaporated skim lowfat milk
- 1 c. pumpkin puree (fresh or possibly canned)
- 1/4 c. egg substitute
- 1 egg white
- 1/2 c. apple butter
- 1 teaspoon vanilla
- 1/2 teaspoon grnd cinnamon
- 1/4 teaspoon allspice
- Place lowfat milk into a 2 c. glass measuring pitcher.
- Microwave on high (100%) till hot, 1 minute.
- Whisk together the pumpkin, egg substitute, egg white, apple butter, vanilla and spices; add in to hot lowfat milk; mix well.
- Pour mix into a 2 qt microwave ring mold.
- Microwave on high till just hard, 7 1/2-8 min rotating the pan a 1/4 turn every 2 min.
- Chill till well chilled.
