Holiday Pumpkin Pudding Recipe

  1. Place lowfat milk into a 2 c. glass measuring pitcher.
  2. Microwave on high (100%) till hot, 1 minute.
  3. Whisk together the pumpkin, egg substitute, egg white, apple butter, vanilla and spices; add in to hot lowfat milk; mix well.
  4. Pour mix into a 2 qt microwave ring mold.
  5. Microwave on high till just hard, 7 1/2-8 min rotating the pan a 1/4 turn every 2 min.
  6. Chill till well chilled.
