Velvety Pecan Candy
- 3 cups coarsely chopped pecans
- wax paper
- 1 12 lbs chocolate-flavored candy coating
- 1 (14 ounce) can sweetened condensed milk
- 14 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees.
- Bake pecans in a single layer in a shallow pan 8-10 minutes or until toasted and fragrant.
- Line a 15X10 " jelly-roll pan with wax paper.
- Lightly butter wax paper.
- Microwave candy coating, sweetened condensed milk, and salt in 2 quart micorwave-safe bowl on HIGH 3-5 minutes, stirring at one minute intervals.
- Stir until smooth.
- Stir in vanilla and pecans.
- Spread in even layer in prepared pan.
- Cover and chill in frig for 2 hours or until set.
- Turn candy out onto cutting board, and cut into squares.
- Store, uncovered, at room temperature.
