Just Plain Meat Loaf - That'S Not So Plain
- 1 1/2 lb. ground round
- 2 or 3 eggs
- 1/4 c. chopped onion
- 1 celery stalk, chopped
- 1/2 tsp. salt
- 1/2 tsp. thyme
- 2 Tbsp. parsley, snipped
- 3 c. Rice Krispies
- 1/4 c. milk or apple juice
- 1/4 c. chopped bell pepper
- 1 c. catsup and/or spaghetti sauce
- 1/4 tsp. pepper
- 3 Tbsp. Worcestershire sauce
- 1 c. grated Cheddar cheese
- In a mixing bowl, combine eggs, Worcestershire sauce, thyme, parsley, salt and pepper.
- Mix in Rice Krispies.
- Add milk.
- Let it sit up and snap, crackle and pop for 5 minutes.
- Break up ground round and gradually add.
- Mix the ground beef with the mixture.
- Mix in chopped bell pepper, onion and celery.
- Shape meat mixture in shape of loaf or football.
- With the side of your hand, make a deep groove in the top of loaf. Tuck the cheese into the groove and squeeze the sides of the loaf to close groove.
- The cheese will melt inside the loaf.
- Poke holes along top and side of loaf with your index finger.
- Make the holes about 1 to 2 inches deep.
- Fill the holes and the top of groove with catsup or spaghetti sauce.
- Bake at 350u0b0 for 1 hour.
