Cheesy Tortilla Corn

  1. Cook and stir onions and red pepper in 2 tablespoons of margarine in a large skillet over medium-high heat until tender. Reduce heat to low.
  2. Stir in corn and Velveeta.
  3. Cook 5 to 7 minutes until cheese is melted and mixture is thoroughly heated, stirring occasionally.
  4. Melt remaining 2 tablespoons of margarine in separate pan.
  5. Stir in tortilla chips and seasoning.
  6. Cook over medium heat 3 minutes.
  7. Stir in cilantro.
  8. Spoon corn mixture into serving bowl.
  9. Sprinkle with tortilla mixture.
  10. Garnish with additional cilantro and red pepper, if desired.
