Cheesy Tortilla Corn
- 1/2 c. sliced green onions
- 1/2 c. chopped red pepper
- 1/4 c. margarine, divided
- 2 pkg. (10 oz. each) corn, thawed and drained
- 1/2 lb. Velveeta, cubed
- 2/3 c. crushed tortilla chips
- 1/2 tsp. Mexican seasoning (optional)
- 2 Tbsp. chopped cilantro
- Cook and stir onions and red pepper in 2 tablespoons of margarine in a large skillet over medium-high heat until tender. Reduce heat to low.
- Stir in corn and Velveeta.
- Cook 5 to 7 minutes until cheese is melted and mixture is thoroughly heated, stirring occasionally.
- Melt remaining 2 tablespoons of margarine in separate pan.
- Stir in tortilla chips and seasoning.
- Cook over medium heat 3 minutes.
- Stir in cilantro.
- Spoon corn mixture into serving bowl.
- Sprinkle with tortilla mixture.
- Garnish with additional cilantro and red pepper, if desired.
