Pork Chops in BBQ Sauce for 45
- 90 pork chops
- 12 md. onions, cut in slices and separated into rings
- 12 cups tomato juice
- 3/4 cup vinegar
- 6 tbsp. Worcestershire sauce
- 2 tbsp. dry mustard
- 3 cups finely chopped onion
- 1 tbsp. chili powder
- 1 tbsp. salt
- 1/2 tsp. pepper
- Brown all chops, keeping in mind browning is the main objective, not necessarily cooking them.
- Layer in 2 large roasters, covered each layer with onion rings.
- FOR THE SAUCE: Combine all sauce ingredients in an extra large saucepan.
- Bring to boil and allow to simmer uncovered for at least 10 minutes.
- Pour over chops.
- Cover.
- Bake in 350 F. oven for 1 1/2 hours.
- Remove covers.
- Continue to bake 20 minutes longer.
- Serves 45 people, 2 chops each.
- Allow at least 30 minutes extra time if taken from refrigerator to oven.
