Honey-Glazed Onions

  1. Preheat oven to 350F (180C).
  2. Peel onion, slice in half on the equator.
  3. Remove centres leaving a bowl in the onion halves.
  4. Filling: In a bowl, stir together 1/2 cup breadcrumbs, corn, zucchini, carrots & beets.
  5. Firmly pack into onion hollows.
  6. Arrange in a shallow baking dish & pour water around the base.
  7. Glaze: In a separate bowl, whisk together the glaze ingredients.
  8. Drizzle half the mixture over the top of the onions.
  9. Bake 30 minutes.
  10. Drizzle with remaining glaze & bake another 30 minutes.
  11. Just before serving, sprinkle onions with remaining breadcrumbs & broil until the crumbs are toasted & golden brown.
