Lemon-Butter Spritz Cookies

  1. In a large mixing bowl, cream butter and sugar.
  2. Add the eggs, lemon peel, lemon juice and vanilla; mix well.
  3. Stir together flour and salt; gradually add to creamed mixture.
  4. Using a cookie press, shape into designs on ungreased cookie sheets.
  5. Sprinkle with colored sugar.
  6. Bake at 400F for 8-10 minutes or until lightly brown around the edges.
