Savory Turkey Scallop
- 1 (8 oz.) pkg. seasoned stuffing
- 1/4 c. butter
- 3/4 c. chopped onion
- 3/4 c. chopped celery
- 3/4 tsp. poultry seasoning
- 3 c. diced cooked turkey
- 1/2 c. butter
- 1/2 c. flour
- 4 c. chicken broth
- 5 eggs
- 1/4 c. toasted almonds (optional)
- Prepare stuffing according to directions.
- Melt 1/4 cup butter in skillet; add onion and celery and saute.
- Mix with moist stuffing; stir in poultry seasoning.
- Spread mixture in bottom of greased 13 x 9-inch pan or casserole.
- Top with turkey.
- In medium saucepan, melt 1/2 cup butter; blend in flour, stirring until smooth.
- Stir in broth; heat to boiling, stirring constantly. Boil and stir 1 minute.
- Beat eggs in mixing bowl; add small amount of hot broth, stirring constantly.
- Add egg mixture to hot broth mixture; stir until well combined.
- Pour over turkey and dressing.
- Bake at 325u0b0 for 45 to 50 minutes or until knife inserted in the center comes out clean.
- Last 10 minutes of baking, sprinkle with toasted almonds if desired.
- Cut in squares. Serve with creamy mushroom sauce.
- Serves 10 to 12.
