Spinach Stuffed Mushrooms
- 10 oz Frozen Chopped Spinach
- 1/3 cup Parmesan Cheese
- 4 oz Feta Cheese Crumbles
- 1/2 cup Green Onion (finely chopped)
- 1/2 cup Fresh Parsley (chopped)
- 24 large Mushrooms (caps only)
- 1/4 cup Canned Articokes (chopped)
- 3 tbsp Bacon (cooked and crumbled)
- Cook frozen spinach in a bowl for 3 minutes on high.
- Drain VERY well and squeeze oit.
- Return to bowl.
- Combine all ingredients and any optional ones at once.
- Mix together VERY well.
- Then fill mushroom caps.
- Place in microwave safe bowl or container side by side, do not stack.
- Cover container with Saran.
- Microwave on high 3-4 minutes.
- Carefully remove Saran as it may release hot steam.
- Serve hot!
