Chocolate Mint Meltaways

  1. COOKIES: Preheat oven to 350F (180C).
  2. Melt over hot (not boiling) water, 1 cup of mint chocolate chips; stir until smooth.
  3. Set aside.
  4. In a large bowl, combine butter, confectioners' sugar, and egg yolk.
  5. Beat until creamy.
  6. Add melted chips and flour; beat until well blended.
  7. Drop by heaping teaspoonfuls onto ungreased cookie sheets.
  8. Bake at 350F (180C).
  9. for 8 to 10 minutes.
  10. Allow to stand for 3 minutes before removing from cookie sheets.
  11. Cool completely on wire racks.
  12. GLAZE: Combine over hot (not boiling) water the remaining 1/2 cup of mint-chocolate chips and vegetable shortening.
  13. Stir until chips are melted and mixture is smooth.
  14. Drizzle each cookie with 1/2 teaspoon of the glaze; sprinkle with almonds.
  15. Chill until set.
  16. Store in airtight container in the refrigerator.
