Snow Day Choco Chip Waffles
- 1 1/2 cups flour, all-purpose
- 1/2 cup whole wheat flour
- 2 tablespoons brown sugar, light use splenda brown sugar blend
- 1 teaspoon baking soda
- 18 teaspoon salt
- 2 cups buttermilk
- 2 large eggs separated
- 13 cup butter melted and cooled
- 3/4 cup milk chocolate chips 1/2 to 3/4 cup
- HEAT WAFFLE IRON and GREASE (use Pam cooking spray) 1.
- Place butter in a small pan on stove and melt.
- Butter may also be melted in microwave using a microwave safe dish on high one min or less.

- While butter is melting and cooling separate the egg whites into the bowl of the stand mixer (I have a kitchen-aid) use attachment for whipping eggs and beat egg whites until stiff.

- Place egg yolks in a med bowl set aside.
- 4.
- While eggs are whipping and butter is cooling in a large mixing bowl toss flours, brown sugar, baking soda, and salt.
- 5.
- Mix buttermilk with egg yolks, add cooled butter.
- 6.
- Quickly add buttermilk mixture to flour mixture until nearly blended.
- 7.
- GENTLY FOLD in whipped egg whites 8.
- Carefully fold in milk chocolate chips 9.
- SPRAY HOT WAFFLE IRON WITH PAM SPRAY 10.
- Cook 2 min (aprox) until golden and crisp Use 13 cup for each waffle square on waffle griddle.
- Serve garnished with strawberries, whip cream dizzled with chocolate garnish.
- Adult version: Same directions as above except Omit Chocolate Chips Add 1/2 teaspoon cinnamon to dry ingredients Serve with fruit sauce or fresh fruit and whip cream
