Mexican Meat Loaf
- 2 lb. ground beef
- 1 Tbsp. chili powder
- 1/2 tsp. garlic salt
- 1 large jalapeno pepper
- 1 medium onion, chopped
- 1 small bell pepper, chopped
- 1 can cream of chicken soup
- 1 can chicken and rice soup
- 1 can tomato sauce
- 1 lb. mild Cheddar cheese
- 4 oz. taco sauce
- 1 large bag Doritos chips
- Brown meat, onion and bell pepper.
- Sprinkle with chili powder and garlic salt; drain.
- Add soups, sauces and jalapeno pepper which has been chopped fine.
- Blend well.
- Bring to a boil, then simmer for 5 minutes.
- Place a layer of chips on bottom of 9 x 12-inch baking dish.
- Pour 1/2 of meat mixture over chips.
- Add a layer of chips, then remaining meat.
- Top with grated cheese. Bake in a 350u0b0 oven until cheese melts.
