Bacon Wrapped Pork Chops with Garlic Lime Sauce
- 4 whole Thick Sliced, Boneless Pork Chops
- 8 slices Bacon
- 13 cups Extra Virgin Olive Oil, Plus More For The Pan
- 1 whole Lime, Juiced
- 2 cloves Garlic, Minced (more Or Less To Taste)
- 1/2 teaspoons Red Pepper Flakes (more Or Less To Taste)
- Salt And Pepper, to taste
- Preheat grill, or preheat grill pan over medium high heat (I used a grill pan) for about 10 minutes.
- While the pan is getting hot, lightly pat the pork chops with a paper towel so they are dry.
- Wrap 2 pieces of bacon around each of the pork chops, and secure with toothpicks.
- Then liberally season both sides of the chops with salt and pepper.
- Add some olive oil to the pan, and place the pork chops in the grill pan.
- Let them cook on the first side for about 10 minutes without flipping.
- Then flip the chops and cook for another 8-10 minutes on the other side.
- While the pork chops are cooking, whisk together the olive oil, lime juice, garlic, and red pepper flakes.
- When it is mixed well, add salt and pepper to taste.
- When the chops are finished cooking, drizzle the garlic lime sauce over top, and serve.
