Mandarin Orange Chicken

  1. Rinse with cold water and trim excess fat from chicken; pat dry.
  2. Coat a large skillet with cooking spray; add oil.
  3. Place skillet over medium-high heat.
  4. Add chicken to skillet; cook 2 to 3 minutes on each side or until lightly browned.
  5. Drain oranges, reserving juice.
  6. Set oranges aside.
  7. Combine juice and remaining ingredients; stir well and pour over chicken in skillet.
  8. Cover and simmer about 25 minutes.
  9. Add reserved Mandarin oranges and simmer an additional 5 minutes.
  10. Serve with rice and pour some of the sauce over the rice.
  11. Makes 4 servings.
