Mediterranean Veggie Wrap

  1. For the wraps: Arrange one of the tortillas on a piece of foil or parchment paper.
  2. Spread with half of the listed amount of hummus (you will have lots leftover), then layer half of each of the other wrap ingredients on top.
  3. Tuck in the sides of the wrap and tightly roll up the tortilla, pushing in any stray ingredients with your fingers as you go.
  4. Wrap tightly in the parchment paper and use a serrated knife to cut the whole thing in half.
  5. Repeat with the other wrap and remaining ingredients.
  6. Enjoy!
  7. For the hummus: Combine all the ingredients in a food processor.
  8. Process until nice and smooth.
  9. Taste!
  10. Add more olive oil if youd like a thinner, smoother hummus, or add more salt and cilantro for flavor.
  11. Serve leftover hummus with anything.
  12. Eat!
