Hot Rice
- 6 slices bacon
- 1/2 c. chopped green onion
- 1 c. brown rice
- 1 (16 oz.) can stewed tomatoes
- 1 c. hot water
- 1 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. red pepper sauce
- 1/4 tsp. cayenne pepper
- 1/2 c. chopped green or red pepper
- 1/2 c. chopped celery
- Fry bacon and crumble.
- In 2 tablespoons bacon fat, cook onions until soft.
- Stir in rice.
- Mash tomatoes very well.
- Add water, curry powder, salt, red pepper sauce and cayenne.
- Mix well.
- Add to rice along with green pepper and celery.
- Cover and cook on low for 10 minutes. Spoon into 1 1/2-quart casserole. Cover; bake at 350u0b0 for 40 minutes.
- Stir occasionally, but quickly to keep moisture from escaping.
- Serve topped with bacon.
