Marian Jeffires' Zucchini Bread
- 3 eggs
- 1 c. oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. grated zucchini (unpeeled)
- 1 c. (8 oz.) crushed pineapple, well drained
- 3 c. flour
- 2 tsp. soda
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 tsp. salt
- 1 c. raisins
- 1 c. chopped nuts
- Grease and flour two loaf pans.
- Beat eggs lightly in large bowl.
- Stir in oil, sugar, zucchini, pineapple and vanilla.
- Sift flour, baking powder, soda, cinnamon, nutmeg and salt together. Stir into egg mixture until well blended.
- Stir in raisins and nuts.
- Pour into 2 well-greased and floured loaf pans.
- Bake at 350u0b0 for approximately 1 hour.
- Cool in pans 10 minutes.
- Remove from pans and cool completely.
- Ice with caramel frosting.
