Jubilee Chocolate Cake
- 3/4 tsp. baking soda
- 1 c. buttermilk or sour milk *
- 1 1/2 c. unsifted cake flour or 1 1/4 c. sifted all-purpose flour
- 1 c. sugar
- 1/2 c. unsweetened cocoa
- 1/2 tsp. salt
- 1/2 c. vegetable oil
- 2 egg yolks
- 2 egg whites
- 1/2 c. sugar
- vanilla ice cream
- Quick and Easy Cherry Sauce (see following)
- Stir baking soda into buttermilk or sour milk until dissolved. Combine flour, 1 cup sugar, cocoa and salt in large mixer bowl. Add oil, buttermilk or sour milk mixture and egg yolks; beat until smooth.
- Beat egg whites in small mixer bowl until foamy; gradually add 1/2 cup sugar, beating until very stiff peaks form. Gently fold egg whites into chocolate batter.
- Pour into greased and floured 13 x 9 x 2-inch oblong pan.
- Bake at 350u0b0 for 30 to 35 minutes or until cake springs back when lightly touched in center. Cool in pan on wire rack.
