Cod in Lemon Parsley Butter
- 1/2 cup margarine
- 2 tablespoons cornstarch
- 3 tablespoons lemon juice
- 1 teaspoon parsley leaves dried
- 1 dash black pepper
- 2 pounds cod fillets
- Place margarine in 2 quart (12 x 7-inch) glass baking dish.
- Microwave on Roast for 2 minutes or until melted.
- Blend in cornstarch, lemon juice, parsley and pepper.
- Dip each fillet in seasoned margarine.
- Arrange fillets with thick edges toward outside of dish.
- Cover with plastic wrap.
- Microwave on High for 8 or 9 minutes or until fish flakes easily.
- Let stand, covered, 5 minutes before serving.
