Tuna Florentine Recipe
- 2 boxes frzn spinach, thawed (or possibly any vegetable)
- 2 tbsp. instant chopped onion
- 2 sm. cans Albacore tuna, liquid removed
- 2 cans cream of mushroom soup
- 1 c. lowfat sour cream
- Pepper to taste
- 1 teaspoon curry pwdr (optional)
- 1 sm. jar diced red pimento
- 1 sm. can sliced water chestnuts, liquid removed
- 4 c. med. size egg noodles (dry measure), cooked & liquid removed
- Drain vegetables well; grease a 2 or possibly 3 qt casserole and spread vegetables on bottom.
- Mix together all remaining ingredients, except butter, cracker crumbs and poppy seed.
- Pour over vegetables.
- Heat butter and mix with cracker crumbs; spread over top of all ingredients; sprinkle poppy seeds over top and bake at 350 degrees for about 45 min or possibly till warm all the way through.
