Even Heartier Pumpkin Bread
- 3 34 cups whole wheat flour
- 1 12 cups brown sugar
- 1 cup white sugar
- 2 teaspoons baking soda
- 12 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground cloves
- 34 cup corn oil
- 14 cup blackstrap molasses
- 2 eggs
- 34 cup unsweetened applesauce
- 15 ounces pumpkin (plain)
- Preheat oven to 350 degrees.
- Grease two 9 x 5 bread pans.
- Dump all of the ingredients in a bowl in the order listed.
- I like to do the oil before the molasses and applesauce just because they slide out of the measuring cup more easily that way.
- Use an electric beater and mix until the consistency is smooth.
- Distribute batter between the two pans.
- Bake for 50 - 60 minutes or until toothpick inserted in the middle of the bread comes out dry.
- Cool and serve.
- NOTE: I just made these as muffins.
- The batter made 20 medium-sized muffins, which were done in 30 minutes at 350 degrees.
