Wedding Angel Food Cake

  1. Sift cake flour and white sugar together 4 times.
  2. In glass bowl (do not use stainless steel), put egg whites, cream of tartar and vanilla (can use dark vanilla but cake won't be as white), salt and almond flavoring.
  3. Beat until foamy and halfway up the sides of the bowl.
  4. Add 3/4 cup sugar and continue to beat until mixture stands in stiff peaks.
  5. Gently fold in second 3/4 cup sugar and flour mixture on slow speed, just until mixed.
  6. Do not overbeat! Do not grease pan.
  7. Bake at 350u0b0 for 35 minutes.
  8. Cool 15 minutes; invert and cool completely before removing from pan.
