Wedding Angel Food Cake
- 1 c. cake flour
- 3/4 c. white sugar
- 2 scant c. egg whites
- 1 1/2 tsp. cream of tartar
- 1 1/2 tsp. clear vanilla
- 1/4 tsp. salt
- 3/4 c. white sugar
- 1/2 tsp. almond extract
- Sift cake flour and white sugar together 4 times.
- In glass bowl (do not use stainless steel), put egg whites, cream of tartar and vanilla (can use dark vanilla but cake won't be as white), salt and almond flavoring.
- Beat until foamy and halfway up the sides of the bowl.
- Add 3/4 cup sugar and continue to beat until mixture stands in stiff peaks.
- Gently fold in second 3/4 cup sugar and flour mixture on slow speed, just until mixed.
- Do not overbeat! Do not grease pan.
- Bake at 350u0b0 for 35 minutes.
- Cool 15 minutes; invert and cool completely before removing from pan.
