Mississippi Chip Cookies
- 2 c. oleo, melted
- 1 box brown sugar
- 4 eggs
- 2 c. sugar
- 2 tsp. vanilla
- 4 c. flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 c. oatmeal
- 1 (12 oz.) pkg. chocolate chips
- 1 c. pecans
- 2 c. Rice Krispies
- 1 c. coconut
- 1 c. raisins (optional)
- 6 oz. butterscotch chips (optional)
- Melt oleo.
- In a large mixing bowl, add to the oleo, brown sugar, eggs, sugar and vanilla.
- Sift together flour, baking soda and baking powder.
- Stir into mixture gradually.
- Stir in remaining ingredients one at a time.
- Mixture will be thick.
- Use 1/4 cup dough per cookie or use an ice cream scoop.
- Bake 6 on an ungreased cookie sheet for 15 minutes at 350u0b0.
- Cool 5 minutes before removing cookies from baking sheet.
- Makes 30 to 40 cookies.
