Spicy Garlic Chicken Pizza
- 12 oz. skinless boneless chicken breasts, diced
- 2 Tbsp. rice vinegar or white vinegar
- 1/2 tsp. crushed red pepper
- 1 Tbsp. cornstarch
- 1/2 c. shredded Monterey Jack
- 1/4 c. grated onion
- 1/4 c. sliced grated onion
- 2 cloves minced garlic
- 2 Tbsp. soy sauce
- 1 Tbsp. olive oil
- 1/4 tsp. black pepper
- pizza shell
- 1/2 c. shredded Mozzarella
- 2 Tbsp. sliced almonds
- Combine chicken, 1/4 cup onion, garlic, vinegar, soy sauce, oil and peppers in a large bowl.
- Stir to coat chicken.
- Let stand at room temperature for 30 minutes.
- Drain; reserving marinade.
- Heat 1 tablespoon olive oil in a large skillet; add drained chicken. Cook and stir about 3 minutes until no longer pink.
- Stir cornstarch into reserved marinade.
- Add to skillet.
- Cook and stir until thickened and bubbly.
- Spoon evenly onto pizza shell. Sprinkle with cheeses.
- Bake, uncovered, in 400u0b0 oven for 12 minutes.
- Top with 1/4 cup sliced green onions and almonds.
- Return to oven for 2 minutes.
