Coquilles Saint Jacques
- 2 Tbsp. butter, divided
- 1 lb. (450 g) bay scallops
- 1/2 lb. (225 g) frozen uncooked medium shrimp, peeled, deveined and thawed Safeway 1 lb For $8.99 thru 02/09
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 cup sliced fresh mushrooms
- 4 green onions, sliced
- 1/2 cup Miracle Whip Original Spread
- 1/4 cup flour
- 2 cups milk
- 1/3 cup Cheez Whiz Cheese Spread
- 1/3 cup Cracker Barrel Shredded Mozzarella Cheese, divided
- 2 Tbsp. finely chopped Italian parsley, divided
- Heat oven to 375 degrees F.
- Melt 1 Tbsp.
- butter in large skillet on medium heat.
- Add seafood and lemon juice; cook 3 min.
- or until shrimp turn pink and scallops are opaque, stirring frequently.
- Remove from skillet with slotted spoon; cover to keep warm.
- Add remaining butter to skillet; cook until melted.
- Stir in vegetables; cook and stir 3 min.
- Add Miracle Whip and flour; stir until well blended.
- Gradually stir in milk.
- Add Cheez Whiz; cook and stir 3 to 5 min.
- or until sauce is hot and bubbly.
- Stir in seafood.
- Spoon into 6 coquille shells; place in shallow pan.
- Sprinkle with cheese.
- Bake 10 to 12 min.
- or until heated through.
- Sprinkle with parsley.
