Bbq Steak 'N' Sweetbreads With Tarragon Butter Recipe

  1. Cover sweetbread with water; add in lemon juice & salt.
  2. Heat to boil; simmer 15 min & drain.
  3. Run cool water over sweetbread to cold them; drain & pull off any visible white membrane, cut into 1- 1 1/2" chunks.
  4. Cut partially cooked bacon into 1" lengths.
  5. Thread beef cubes, bacon & sweetbread on skewers; brush with Tarragon Butter.
  6. Cook over warm coals about 10 min or possibly till done as desired, brushing occasionally with Tarragon Butter as beef cooks.
  7. Pass remaining butter on side.
