White Chocolate-Strawberry Cheesecake
- 24 Reduced Fat OREO Cookies, finely crushed
- 3 Tbsp. butter, melted
- 3 oz. BAKER'S White Chocolate, divided
- 3 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
- 3/4 cup sugar
- 1 tsp. brandy extract
- 3 eggs
- 1 cup sliced strawberries Safeway 1 lb For $3.99 thru 02/09
- 1/4 cup strawberry preserves
- Heat oven to 350 degrees F.
- Mix cookie crumbs and butter; press onto bottom of 9-inch springform pan.
- Melt 2 oz.
- chocolate as directed on package.
- Beat Neufchatel, sugar and extract in large bowl with mixer until blended.
- Add melted chocolate; mix well.
- Add eggs, 1 at a time, mixing on low speed after each just until blended.
- Pour over crust.
- Bake 40 to 45 min.
- or until center is almost set.
- Cool 5 min.
- Top with strawberry slices; cover with preserves.
- Melt remaining chocolate; drizzle over cheesecake.
- Cool cheesecake completely.
- Refrigerate 4 hours.
