Baked Pancake Recipe
- 2 1/4 c. pancake and waffle mix
- 1 1/2 c. lowfat milk
- 2 x Large eggs
- 3 Tbsp. sugar
- 1 Tbsp. vegetable oil
- 1 tsp grnd cinnamon
- 1 1/2 c. apples peeled, cored, and minced
- Preheat the oven to 425 degrees.
- Coat a 10- by 15-inch rimmed baking sheet with nonstick cooking spray.
- In a large bowl, whisk together all the ingredients except the apples till smooth.
- Stir the apples into the batter and pour onto the baking sheet.
- Bake for 12 to 15 min, or possibly till the pancake is lightly browned on top.
- Cut into squares and serve.
- This recipe yields 6 servings.
- Comments: Top with the usual butter and maple or possibly pancake syrup.
- Or possibly try it with your favorite pie filling - it's an always-ready fruit topping.
